Quick Strawberry Jam - A Recipe

Inspired by the jam stickers in an old frankie issue - yesterday I decided to make jam. This 'jam' is inspired by a Jamie Oliver recipe and it's super quick and really delicious, despite being more of a sauce than a jam. It's not really the type of jam you put on your toast, more the type you put in little cakes.

SO FIRST UP - sterilise your jars. I did this my putting them in a pot of boiling water and then, using tongs, I put them in the oven to dry. Meanwhile I got started on making my jam.

Start by putting the seeds of a vanilla pod, 300 grams of sugar and about 400 grams of strawberries into a bowl.



Lightly mush with a whisk until your mixture looks something like this...
























Add lemon juice and transfer to the stove, leave it on for about five minutes whilst mashing it to make the chunks a bit smaller (I used a potato masher).

Transfer into sterilised jars and store in the fridge - try to fill the jam right to the top of the jar to lessen the chance of the jam going mouldy!

I then used my 'jam' to make butterfly cakes - which I highly recommend.
